Spaghetti Syracuse Style

Ada Boni collected regional recipes from around Italy in an early 20th century recipe collection that continues to be updated today, and remains a popular gift for weddings.

Although the early editions do not contain spaghetti puttanesca, it does include a Siracusa style spaghetti that is very similar. Siracusa is a city on the Island of Sicily.

In the novel Ferito a morte by the award winning Raffaele La Capria, Puttanesca is cited as in the style of Siracusa, linking the two sauces as possibly the same despite the various mythologies to explain where Puttanesca comes from.

The flavor combinations of this recipe are common throughout Naples, the surrounding region, and islands.

Ingredients

1/2 oil
2 cloves garlic
6 ripe tomatoes
1 small eggplant
2 roasted green peppers
10 sicilian olives
1 tablespoon capers
1 tablespon fresh basil
3 anchovy filets
½ teaspoon salt

Instructions

Brown garlic in oil
Remove garlic.
Add tomatoes and eggplant.
Cook 30 minutes.
Add peppers, capers, basil, anchovies and season with salt and pepper.
Simmer another 10 minutes.
Serve over spaghetti.
