However, not everyone agrees what that dish should be. <\/p>\n<p>Caruso loved chicken liver, and he believed it was essential to help him sing opera. Most spaghetti alla caruso recipes are similar to <a href=\"https:\/\/www.redsauceamerica.com\/blog\/?p=237\">this one from 1939<\/a>. In her cookbook, <I>Where To Dine in Thirty-Nine<\/I>, Diane Ahsley included a recipe from the Caruso chain of restaurants. That sauce contains= two essential ingredients: liver and mushrooms.<\/p>\n<p>However, Knickerbocker Hotel chef Louis DeGouy claims the real spaghetti alla Caruso doesn&#8217;t have chicken livers.  <\/p>\n<p>Caruso literally lived at the Knickerbocker Hotel in Manhattan for many years while he was in residence at the Metropolitan Opera House. He premiered <a href=\"https:\/\/www.metopera.org\/discover\/archives\/notes-from-the-archives\/the-met-without-caruso-major-debuts-100-years-ago\/\">there back in 1903<\/a>.  <\/p>\n<p>Hotels in that era usually provided meals to their guests, and Caruso was no exception. He livered there after all, in an apartment without a kitchen. However, he also ate at restaurants in the neighborhood. Those restaurants included spaghetti with livers, and for most of the 20th century Spaghetti Caruso meant just that. <\/p>\n<p>Louis DeGouy published his famous hotel recipes in The Gold Cookbook in 1947, including a Spaghetti Caruso. DeGouy&#8217;s version skips the liver but does include mushrooms. <\/p>\n<p>This recipe is adapted from <I>Gold Cook Book<\/I> by chef Louis DeGouy.<\/p>\n<p>This recipe is for 2 pounds of spaghetti, which seems like a lot but Enrico Caruso loved food quite a bit. <\/p>\n<h3>Ingredients<\/h3>\n<p>1 cup tomato paste<br \/>\n\u00bd cup Marsala wine<br \/>\n3 lbs lean beef<br \/>\nVeal knuckle<br \/>\n\u00bc lb ham<br \/>\n4 slices bacon<br \/>\nBacon fat<br \/>\n1 leek<br \/>\n3 Celery stalks<br \/>\n2 Carrots<br \/>\n1 tablespoon Parsley<br \/>\n1 tablespoon Chervil<br \/>\n2 garlic cloves Garlic<br \/>\n2 sprigs thyme<br \/>\n2 bay leaves<br \/>\nBasil<br \/>\nPowdered sugar<br \/>\n\u00bd lb fresh mushrooms<\/p>\n<h3>Instructions<\/h3>\n<p>Fry bacon and ham.<br \/>\nReserve.<br \/>\nDredge beef in sugar.<br \/>\nFry beef in bacon fat.<br \/>\nWhen it forms a crust, combine with bacon and ham in stew pot.<br \/>\nAdd veal knuckle, leeks, celery, carrot, herbs, salt and pepper.<br \/>\nCover with boiling water.<br \/>\nSimmer 3 to 4 hours.<br \/>\nSieve.<br \/>\nAdd tomato paste and wine.<br \/>\nBring to boil.<br \/>\nSimmer and add sliced mushrooms.<br \/>\nCook spaghetti.<br \/>\nCombine spaghetti and sauce.<br \/>\nTop with Parmesan cheese. <\/p>\n","protected":false},"excerpt":{"rendered":"<p>Italian opera singer Enrico Caruso helped make Italian food mainstream, so perhaps it is unsurprising a spaghetti dish was named in his honor.
