\"rigatoni<\/center><\/p>\n

Dante’s of Bologna, a night club in the Italian city, served pasta with vodka sauce to late night partiers. Vodka was not common in Italy until the 1970s. <\/p>\n

There are rumors that a vodka company sponsored competitions to find recipes and uses for vodka in Italian cuisine. There isn’t much evidence that rigatoni alla vodka is the result. More likely the dish was invented in New York City about a decade before the discotecas were serving vodka. <\/p>\n

It’s unlikely however that this was the first tomato and vodka sauce, although probably the first iteration of the dish in Italy. <\/p>\n

Recipe is for 3\/4 lb of Rigatoni, but any shape can be substituted. <\/p>\n

Ingredients<\/h3>\n

\u2153 cup vodka
\n\u00bd cup whipping cream
\n3 \u00bd cups tomatoes
\n2 tablespoons olive oil
\n1 large clove garlic
\n\u215b teaspoon sugar
\n3 tablespoons unsalted butter
\n\u00bc pound diced pancetta<\/p>\n

Instructions<\/h3>\n

Heat oil
\nAdd garlic and cook 1 minute
\nCrush tomatoes in mixing bowl
\nAdd tomatoes, sugar
\nBring to boil
\nReduce and simmer
\nMelt butter in separate pan
\nAdd pancetta just before butter foams
\nCook until pancetta begins to crips
\nAdd vodka to pancetta
\nEvaporate vodka, about 3 minutes
\nAdd tomatoes and cream
\nSimmer for 10 to 12 minutes
\nTurn the pasta in the sauce<\/p>\n
